No, really, I’m leaving now…

Just wanted to post real quick before I head out! I made my dad a batch of granola this morning using this recipe. He LOVES it and can’t get enough and I always make him some when I am in town. For this batch, I used golden raisins, since we were out of the others.

This is the BEST granola you will ever have! I love making my own since so many commercial granolas are loaded with extra sugar, oil and preservatives. This lasts about two weeks in the fridge and is wonderful in yogurt and sprinkled with FLAX! (Remember, don’t be lax about your flax!)

 

I also made a batch of tofu using Andrea’s recipe from Bella Eats. I’m going to bring it up to school with me for sandwiches and salads and such. Aren’t my parents sweet to let me mooch!?

I sipped on some coffee cocoa in my new peace mug while I was cookin’!

I ran around like a crazy person all morning pulling my bags together. It’s a good thing I will be back in a week because I probably am leaving something behind!

 

For lunch I used the leftover garlic and herb roasted potatoes and broccoli from last night to make a scramble. I topped it with a six cheese Italian blend. It was Yum!

Alright, it’s official. I am spoiled on yummy, fresh food. Ok, I’m really leaving this time. See ya later!

Those foods looked so inviting, that my mouth was watering, I must be hungry! I think I will have some of your granola…oh yeah, will you make some for me too!

Wow, everything looks delicious, girly! I looove tofu. I have seriously become obsessed with it ever since I figured out how to make it “the right way” :) I haven’t tried it as a sandwich yet, but thanks for the idea!
