Homemade Maple Cinnamon Almond Butter

by hungryyogini on February 27, 2009

Tonight’s meeting ended super early and I was able to get on the road by 6:45. Before the meeting started at about 4:30, I munched on this:

I had a couple of random snacks when I got back to my house around 8:45 but no pictures. I hadn’t gotten my camera out of the car yet!  And then…magic happened.

Warning: What you are about to see may cause uncontrollable drooling, incessant appetite, and unexplainable hunger pains.

Yah, I said it. Homemade Maple Cinnamon Almond Butter. While driving home tonight, I was dreaming of what I might make this weekend. Granola, oh yah. A stir-fry of some kind with lots and lots of veggies, definitely. Almond butter? YES! I was feeling totally inspired to make some after seeing it on many of my favorite blogs. I had A LOT of think time in the car and came up with this little treat in my head. Feast your eyes on this:

Homemade Maple Cinnamon Almond Butter

- 1.5- 2 cups raw almonds

-1/4 cup maple syrup

- about 3 tsp cinnamon to taste

- 1 tsp salt

Roast almonds in a 400* oven for 15-20 minutes. Let cool for a few minutes and place in a food processor. Grind until smooth (about 10 minutes), scraping sides as needed.

Simple as that! I love ingredients lists like this…so minimal, yet so good! This is going to make some mean toast in the morning. I can taste it now. Mmmm.

Off to dream of breakfast and a leisurely yoga filled morning. Good night!

I have so many almonds just waiting to be made into butter!!! This looks INCREDIBLE!

Did you roast the almonds with all the ingredients on them or did you add them to the puree?

Shelby,
I combined all of the ingredients and the roasted them. Let me know if you try it!

Your homemade almond butter turned out great…I love the addition of maple syrup and cinnamon and look at that creamy texture. Beautiful!

What am I doing wrong? Your almond butter looks so amazing. I tried to make it in my KitchenAid Food Processer and I couldn’t get the almonds past a sugary consistency- it wouldn’t turn into a liquid. It smelled great, however. Could it be the almonds I used? Would this make a difference, how do I know if they are raw? Please help I really want to try this! Thanks.

Alexandra,
I toast them first, then grind them. It takes quite a long time for them to smooth into almond butter, but it’s worth it!
