Spicy Lemon Basil Chicken and Cauliflower Puree

So, it turns out that the object lodged into the top of my car was a BULLET!! What the heck!? Have you ever heard of such a thing?

It is a GOOD thing I was no where near the car when that happened. I’m telling you, Gainesville is the scariest place on Earth! Just a couple of weeks ago they caught a sex offender in the bushes outside of where I live. And a girl was attacked just down the street the week before Spring Break. Not only are people being hurt, but many cars and houses are being vandalized. What is this world coming to?

 

Ok, that was heavy. Moving on. Tonight’s dinner was really delicious. It was partly inspired by this post over at Foods That Fit. We used to have pureed cauliflower all the time…my mom called them mashed potatoes.=)  They don’t taste much like mashed potatoes but they are good in their own right.

 

I REALLY wanted to make some “healthy comfort food” tonight and roast some turkey breast on the bone but it is so much work and I was cutting it close on time. I decided to grill up some chicken instead and came up with Spicy Lemon Basil Chicken.

I steamed the cauliflower, then pureed it with ghee (clarified butter), about 1/4 cup low fat milk, and salt and pepper.  It was a really delicious meal.

 

The basil from tonight came from our backyard.  We have a little herb garden and will be planting these  new additions soon. We also have rosemary, chives, oregano and parsley.

Oh, and on another note, I tried a new yogurt this afternoon:

I ate about half of this guy and was really impressed. It is really delicious!  Very creamy and not too sweet, although I am still partial to my plain, thick Fage 2%. I also had this sweet thang:

Mmm..I love dried pineapple.

Your dinner looks fabulous! I am so glad to see you made the pureed cauliflower! It is so yummy!

I am jealous of your herb garden, I think that is so cool to do! We had a huge garden when I was a kid and I hope to someday have one of my own. Way to be green!

YIKES!!! Thank goodness the bullet was in your car, and nowhere near YOU – pleeeease stay safe.

Lovely herb garden!! My mom and I will plant ours as soon as this damn weather warms up a bit, haha :-D

A bullet!?! That is crazy! Obviously good that it was the car though and not you!!

I love dried pineapple. I’m thinking about getting a dehydrator just to make those (and gina’s macaroons)!

That’s so frightening! I would be trembling! Fortunately you have yogi skills that you could bust out if need be! ;)
The cauliflower puree looks/sounds beautiful. I might try to veganize it.

I am so glad that you were NOWHERE near that car when that happened! Wow…I am so sorry!! I’m glad that everything is ok now.

I love lemon flavored chicken! This looks amazing, especially with pureed cauliflower. And I love me some dried pineapple, too :)

I didn’t use flour in my burgers. Instead I tried them with oats!

Whoa – pretty freaky about the bullet!

I love the idea of pureed cauliflower – great stand-in for mashed potatoes.
