Adventures in Vegan Baking

Remember those extra ripe bananas from this morning? Well, I decided to try my hand at vegan baking and am beyond pleased. But before we get to that, I’ll show you my lunch…

 

Before lunch I had an..appetizer? An organic pink lady Apple a la Business Law.

Then came the main thang; leftover Dahl with rice and a dollop of Fage.

And then the fun began. I have been wanting to bake something for a while now and decided today was a good opportunity since we have all of those extra ‘nanners. I turned to my friend VeggieGirl, the queen of vegan baking, for some recipe advice. She suggested her recipe for PBJ Banana Bread which she adapted from Veganomicon, one of my favorite cookbooks. I instantly whipped out my copy and got to baking.

 

I decided to make muffins out of the batter, as I hope to share some of these guys and figured muffins were the best way to make that happen. My variations included using whole wheat pastry flour, using turbinado sugar rather than regular, and adding peanut butter and carob chips to the party.

Put into the oven at 350* for 30 minutes:

The smell of these muffins baking nearly knocked my flops off (no socks, it’s a flip-flop kind of day).  It smelled amazing in the house and they were so simple to make. And healthy too! I had to dig in right away so I split a warm one with my mom.

These muffins were delicious; very moist and somewhat thick, kind of a cross between a muffin and a cake. Holy freakin’ Yum! I am now slightly obsessed with vegan baking and can’t wait to try another recipe. Thanks VeggieGirl for the inspiration!

 

Well, that was a fun afternoon of procrastination, but seriously, it’s time to do some real work. See ya!

ohh I loveee carob chips!!! the muffins look perfect!! and thanks for responding to my other comment! :) have you done a post on all of your mini fridge basics??? I would love to see that!

WOW these look so good! I just bought a vegan baked goods cookbook, and everything i’ve made is amazing!
