Strawberry-Kiwi Spring Salad

Tonight’s dinner was light and fresh, sweet and savory. We are on a mission right now to “eat down” our fridge and pantry. We have an abundance of fruits, vegetables and pantry staples like grains and beans. I often like to use this as inspiration for new creations (like today’s muffin baking).

 

I decided to keep dinner really light tonight with a salad. We have a ton of kiwi’s and a whole package of strawberries that were just calling my name.

This salad was light and fresh. I drizzled it with some Bolthouse Farm’s Yogurt Dressing and really enjoyed it. Also in the mix? Organic baby spring mix, organic carrots, organic cucumber and some Boar’s Head Natural Tuscan Turkey.  We usually buy all of our organic produce at Costco or Sam’s, as it is much more wallet friendly this way. Do you eat organic? How do you fit it into your budget?

Backtracking a little…this afternoon I sipped the other half of my Kombucha from yesterday:

And I may or may not have had another half of a Peanut Butter, Banana and Carob Muffin.

 

A note on Kombucha: I have gotten a few questions about what Kombucha tastes like. Beadie over at What I Ate Yesterday didn’t have a good experience with hers and mentioned that the taste was reminiscent of vinegar. I will admit that when I first tried Kombucha I turned my nose up. They definitely have a unique taste but I really love them now! I went and looked on the GTS Synergy Kombucha website and found a really great FAQ section here.  I would highly suggest you look over that if you are interested in trying Kombucha or have questions about it. And in my opinion, the Grape and Strawberry flavors are great for first-timers =) Hope that helps some of you guys who are interested in trying it.

Lots of exciting things happening tomorrow…Lunch with Jenna at Grassroots Organic Restaurant then the start of my yoga teacher training weekend! I need to get lots of rest tonight.

Looks delish! Adding frits to “veggie” salad just makes it 10x better (for me anyway :0)

Lovely fresh salad! I buy as much organic food as possible, but as you mentioned, organic is not always budget-friendly. I don’t skimp on produce with skin that I eat because the skin is where most of the pesticides from conventional growing reside. During this economic crisis, I actually find myself budgeting other purchases rather than food – I haven’t been clothes shopping for a while because I can’t seem to give up expensive food!!

i agree- it totally takes time to get used to, i like it! But not ENOUGH to spend my dollaz :D My dollaz usually go to organic dairy products and meat…i’m hoping all the non-hormone stuff will be good for my little porcelain skin :)

I just bought a grape kombucha today. I’ve tried strawberry and mango- next is going to be guava. I love these things. They are pretty spendy- but they have become the new item/reward that I treat myself to.

I’ve been wanting to buy more organic produce, but it’s definitely pricey.

Lovely Kombucha info! That stuff is sooo good.
I buy organic frequently but not always. Just depends on what I can find. And my grocery bill is def horrendous. Oh well.

Love that creative salad! I might have to recreate it with Tofurky:)

I make it a priority to eat local and organic. If I can’t afford to buy all local or organic, I choose to spend the extra $$ on items that are known to absorb a lot of pesticide residue (peaches, strawberries, etc.) and buy conventional for things with a skin (oranges, avocadoes, bananas, etc.).
