I think after my intense monitoring of weather.com today I should consider a career in meteorology. According to my calculations (see? I sound so official.) I should have the all clear to drive home tonight! YIPEE.
In between looking at the radar and reading the hourly forecast, I managed to do a little bit of studying. Oh, and I found out that I got a 93 on my Business Law test from Monday night. Procrastination and luck Hard work and studying really do pay off!
I took a dinner break around 6:00 and made a rather ugly egg white scramble with spinach and a babybel cheese along with a sweet tater. The trick to cutting your potato is to make a zig-zag cut down the middle, then squish the two ends together. Makes it look fancy =)
This was a surprisingly satisfying meal. I had an orange for dessert and will hopefully not get too hungry between now and when I get home at 11:00pm, although I highly doubt that.
Off to take one more test, then home sweet home. Sorry my posts have been rather short today. I promise it will get more exciting tomorrow. Stay tuned!

Congrats on your test and good luck on your next one!!
Sounds like a great dinner. Sweet potatoes are always an excellent choice for a quick, healthy, meal! You might like to try some cinnamon sprinkled on it… that’s the ONLY way I eat them :-))
I like the potato technique!! I will try next time I have one. Which will probably be very soon, actually…
I hope your drive (and book) went well tonight!
Have a safe trip home!!! you lucky girl!!!
PS how does having the blog work with living in a sorority house?? Do the girls you live with know?? How did ya tell them? I’, going to have 3 roommates when I live in next year, and I have no idea what I’m going to do!! haha!
CONGRATS on the amazing grade! Business law sounds way outta my league; you’re phenomenal. Thanks for the great sweet tater trick! Have a safe trip home and enjoy!
I like your fancy potato trick :) I usually smoosh the ends (yeah, that’s a technical term), but the zig-zag thing is great!
Hope you have (had?) a safe trip home :)
Jessica,
My roommate and close friends know about it and think it’s really great! It’s nothing to be ashamed of =) I explained it like it was more of a job rather than a hobby. They all think it is neat that I am doing something I am passionate about. Feel free to email me if you have any questions about living in the sorority house!
