Have you ever heard that song? Love it. It’s weeks like this past one I had that make me thankful for days like today when you get to stop and enjoy the little things. I spent most of the day moving around the kitchen making and munching granola,
walking Raleigh, who is know passed out next to me on me,
and enjoying the comforts of home. I realize on days like this how much time I spend just sitting at school. Just sitting all day. I basically live at my desk when I am there and just become so grateful on days like this when I get to move around and do things I enjoy! It’s the little things my friends, the little things. What are the little things you are thankful for?
Dinner was simple:
Boar’s Head Natural Tuscan Turkey with Sabra spicy hummus on some freshly baked multi-grain bread from Greenwise, with a salad of organic baby lettuce, steamed and chilled broccoli, red bell pepper, carrots and Thousand Island yogurt dressing. Mmm, I have missed lean protein in my life. I don’t get to have too much chicken and turkey when I am at school and this really hit the spot.
I also picked up some carob covered raisins at Greenwise this afternoon.
It was all I could do to stop at just one handful. They are so good!
Night guys! I’m off to rot my brain with some TV. Mmmm, little things.

The little things really are the best sometimes, aren’t they?
OH! And i just saw your response about Raleigh! I had a feeling she was a doodle… my mom has a goldendoodle named Stella!
This post just made me grin from ear to ear. I love the JOY! I too have come to value the little things.
Ooh, look at all those beautiful golden raisins in your granola. Looks so yummy Courtney! So many little things I’m grateful for. Right now, it’s the light pitter-patter of the rain outside and the fact that I have a roof over my head. I’m also grateful for your picture of carob covered raisins…just makes me happy. :)
Hi there!
The simple dinner you created looks extremely yummy and I looove that you make your own granola! I don’t know what the trick is to make them super crunchy so I have to depend on buying ‘em…like Zoe’s.
P.s. If you like Zoe’s granola, please do come visit me at http://luckytastebuds.wordpress.com, I’m hosting a giveaway!
Hope you have a faaabulous Friday!
There was a Labradoodle puppy at my “race” this past weekend (SOOO CUTE) and I thought of you! Raleigh is adorable :)
Glad to hear you’re enjoying your time at home! That granola looks so good! I can’t wait to see it in some upcoming posts ;-)
I agree that we need to be thankful for all the little things that seem to go overlooked… family, friends, health, etc. Enjoying those little things can make your day so much brighter!
btw, Raleigh is such a cutie!!!
ok I need to stop being lazy and try making my own granola, everyone keeps talking abou ti
The pup looks so comfortable!
Yumm carob chips!! Enjoy watching tv and relaxing at home, I know that it becomes a rare occasion to do that kinda stuff at school! :)
I am thrilled to be on my spring break from school. Definitely something to be thankful for!
I think I could eat carob covered raisins, and only carob covered raisins for the rest of my life! Absolutely fantabulous.

India.Arie songs + homemade granola + carob covered raisins = perfection.
That granola and dinner look fantastic!! Glad you’re enjoying your time at home :)
Mmm…I have just discovered golden raisins, they are such a treat over the regular ones!
The little things…I love getting snail mail that isn’t a bill! :)
My little things:
1. Waking up to the sound of (a) the pitter-patter of rain or (b) birds chirping in the trees.
2. Taking a breath of fresh air upon first stepping outside.
3. A hug from my boyfriend.
I’ll leave you with these, but there are so many more… :)
It sounds selfish, but I’m graetful for my freedom. I’m single and young. I get to do what I want, go where I want to go and eat what I want all when I want. One day I’ll have responsibilities and I’ll love it, but for now I’m so grateful that I’m all I have to take care of!
