Southwest Chipotle Chicken Sandwich

The sun is desperately trying to peak through the clouds down here in Tampa but unfortunately it is still quite gloomy here. It’s a good thing I love being in the kitchen, as that’s about the only thing to do on a day like today.

 

I grilled up some chicken on the George. I seasoned it with Mrs. Dash seasoning in Southwest Chipotle.

I have never used this before and was really impressed! I sprinkled a bunch on the chicken:

then put it on the grill for 5 minutes. VOILA!

It smelled really wonderful while it was cookin’. I love the smoky yet sweet smell of paprika and the whole kitchen was filled with it. YUM. I have been craving lean protein like no other lately and was excited to make a chicken sandwich with it using the multi-grain loaf I got from Greenwise yesterday.

 

Onto the sammie went about 2 or 3 oz Southwest Chipotle Chicken, 1/4 of an avocado, a thin layer of Sabra spicy hummus and a handful of baby lettuce.

The chicken was so flavorful, very smoky and spicy. The coolness of the avocado went perfectly with the spicy chicken and the added kick of the hummus. AND THE BREAD…this is the best bread I have ever had. So soft but still hearty and 1000 times better than any pre-packaged bread out there. The bakery is the way to go! I could talk about this sandwich for hours…but I won’t.

 

Along with the sammie I had an apple,

Mmmm…sandwiches are my favorite lunch. And the carob raisins aren’t so bad either Tongue out  What is your favorite lunch?

 

This afternoon I am going to run a bunch of errands and then get ready for the yoga workshop with Micheline Berry that starts tonight! It’s called “Rock the Shakti: A Liquid Asana Urban Immersion Retreat.” Tonight’s session is from 7-9pm and will be full of lots of creative sequencing, exciting music…and hopefully some dancing Open-mouthed

Fantastic lunch! Bread totally makes a sandwich. I love my wrap combinations for lunches.

Ah that Sammy looks so yummy! I always want different things for lunch so it’s hard to choose just one! My favorite lunch typically includes carrots, cottage cheese and an apple as the sides though, and then maybe a BBQ salmon pita or Sammy, or Amy’s Split Pea Soup, or I love Amy’s White Cheddar Mac w. Green Beans, Cottage cheese and sliced tomatoes, sometimes I’ll have a yogurt mess of greek yogurt, banana, blueberries, pumpkin and cereal for lunch. Too many favorites to pick just one!

I have been loving bakery bread, too! It’s just so much more real tasting than the prepackaged stuff most of the time!

That chicken looks amazing! I need to get some of that seasoning for myself! My favorite lunches are turkey wraps and tuna and goat cheese sandwiches!

That sandwich does look amazing…! I am a vegetarian though and have never used a George–do you think it would be possible to get similar results using tofu?
As for my favorite lunch, I am a huge fan of a giant bowl of vegetable soup with cheese and crackers! In fact, I think I will have to eat that today!

Lately, I have been obsessed with wraps!!! Some hummus or guacamole, fake turkey, lettuce & salsa just becomes honestly the most delicious thing! :)

My favorite lunch is a salad with baby spinach leaves, Napa cabbage, celery, carrots, and freshly squeezed lime juice and drizzles of organic coconut oil–oh, and macadamia nuts! Yum-O! :-)

My fave lunch is totally an open faced PB and nanner sandwich. It keeps me full for so long and it’s so delish. I just have to make sure I pile on the veggies at dinner!

You can never go wrong with a healthy homemade wrap or sandwich! Those have to be my favorites.

That sandwich looks amazingly delicious! It’s a tie between a loaded salad (nuts, dried & fresh fruit, some type of protein, organic produce) and a loaded sandwich (first and foremost excellent whole wheat bread, some type of spread, some type of protein, and greens) for my favorite lunch. Oh, and greek yogurt has to be part of it ;)

I went out and bought the Mrs. Dash and made chicken breast Saturday. It was AWESOME!!!
