Crispy Chicken Finger Salad and Lots of Dessert

This morning, after running various errands and eating Mexican chocolate brownies and fro-yo before noon (actually, I think it was more like before 10:00am. It was a tiny bite of each and heck, you only live once!),

I ventured out on my bike for a 45 minute ride through the neighborhoods that surround my house. It was extremely windy and very difficult to pick up speed. My legs were working over time! I went about 9 miles and had an average speed of about 13mph. It was a great ride despite the crazy wind.

 

I came back and started preparing lunch. On the menu? Crispy Chicken Finger Salad. Ellie Krieger’s recipe was the inspiration behind this meal but I added some extra flavahh by seasoning the chicken first with Mrs. Dash’s seasoning in Southwest Chipotle, crushed red pepper flakes, salt and pepper. Into the lowfat buttermilk bath it went…

I let it soak for about 30 minutes in the fridge. In the meantime, I hammered the crap out of some cornflakes…

Then came time for dipping,

and baking.

While it baked I chopped some veggies (and ate a refreshing and crisp apple) for a salad. After 15 minutes or so in a 400* oven, they were done!

On the side I had a random rye cracker spread with a Laughing Cow Garlic and Herb cheese wedge (I forgot how much I love these!). I used one of my favorite dressing’s, Galeo’s Miso Dijonnaise. It is very creamy and flavorful and 1tbsp only has about 20 calories. We  ordered it from here a while back.

 

This is one of my favorite meals.  It’s very light and satisfying. I think I ate it three or four times  a week last summer. YUM! I highly recommend trying it! It would be a great one for kiddo’s too.

 

I must be in a dessert mood today (go figure). I had another 1/4 of the chocolate cupcake from yesterday with another spoonful of vanilla fro-yo because, well, it’s five o’clock somewhere.

Laughing Cow is the best – you can use it for a thousand different things! Ellie Krieger is a culinary genius, love her and your lunch looks great!

That chicken looks so easy to make and fabulous. But that dessert looks even better.
