Get Grillin’

I’m kind of obsessed

I finally found my winning combination:

- 1 very ripe frozen banana

- 2 MASSIVE handfuls of organic spinach

- 3/4 cup Living Harvest Vanilla Hempmilk

- Handful of ice

And that’s it! I should have know that simplicity would be the best strategy. It’s true; less is more. This was such a sweet and refreshing afternoon drink. Is it wrong that I’m already looking forward to having one tomorrow? 

 

After an afternoon of running errands, yoga-ing, bike riding, walking Raleigh and enjoying the gorgeous weather, I started working on dinner.

 

I have been dying to grill some portabella mushroom caps ever since I put some on top of the zucchini pasta the other night. They are so flavorful and hearty and I knew they would be perfected grilled. I drizzled them with some balsamic vinegar and olive oil and let them sit for a few minutes. I also grilled up some zucchini and chicken and roasted some red beets to put on top of a bed of romaine and fresh basil.

The beets turned everything pink (my hands and t-shirt included).

I love balsamic vinaigrette and decided to whirl some up in the Magic Bullet to go on the salads. I combined balsamic vinegar, olive oil, spicy brown mustard and a clove of garlic to make a really tasty dressing. I love the strong flavor of balsamic vinegar so I always use less oil than typically goes in a vinaigrette. This was perfect and only took all of two seconds to make.

I loved grilling the veggies. It just screams Summer. We don’t do it too often but that will have to change! The warm veggies were great on a salad and made the meal very savory and hearty despite the fact that it was just a salad. Next time I want to try grilling some pineapple. Or peaches. Maybe for dessert? Mmmm, I can taste it now.

I need to clean my grill, and buy propane, and some mushrooms…but other than that, I’m all set for summer!

This is by far my favorite green drink:

3-5 handfuls of spinache
1 cup of frozen yummy blueberries
1 frozen banana
1 big spoonful of flaxseed
1 cup of soymilk
a drop or two of pure Grade B maple syrup

I took and leap of faith and made my first green smoothie yesterday, post-workout. It was DELICIOUS. =]

Also, where do you practice yoga in Gville? I’ve been looking around for a place since I’m up here for the summer…

I love grilled portobellas! With a little seasoning and a bun, they make a great vegetarian burger.

Well that’s just about the prettiest GM I’ve ever seen – fabulous color!! Grilled peaches and pineapple are awwwwesome in the summer – top with some cool whip or vanilla ice cream (or just eat alone) and you’ve got yourself a great grilled dessert!

All of your grilled goods look SO SO delicious! I am jealous of so many of the things you are making. You are my inspiration! I must tell you that I am about to go make my first batch ever of homemade AB and then tonight for dinner I am making the crispy chicken fingers that you’ve made a few times. :)

There are only two studios there. Sanctuary and Big Ron’s Bikram Studio. I usually practice at home in Gainesville but if I were to pick one I’d go to Santuary.

Oooh, I totally agree about the simplicity thing. I love my GMs with almond milk, a frozen banana, and spinach…that’s it. If I had some milled flax seed, I might add it, but alas, I do not.

Love the grilled veggies! I just used a grill for the first time last night and I’m so excited to start trying it out more.
