Afternoon!
My day started nice and early today at 6:30am. I went to bed around 1:00am and when I woke up I was convinced that it was more like 8:00am.
Well, I was wrong. Oh well, I went with it… Five and a half hours of sleep? Sure, why not!
After a somewhat lazy morning I drove my sleepy self to the studio to practice with Ashley. I definitely needed that push this morning, otherwise I think there would have been a whole lot of child’s pose and a very long savasana on my part today…
We were both kind of tired when we started but as soon as some fun music came on we were dancing and laughing and almost literally jumping off the walls. Don’t worry, it’s normal
Ashley studied with Shiva Rea and just got back from a retreat in Brazil with Micheline Berry. I fell in love with that fluid, dance-like style when I first started taking Ashley’s class a while back, so it’s a real treat to practice one on one with her. We played with some fun poses and movements this morning, just flowing spontaneously, kind of like a moving meditation. We may or may not have crawled across the floor like chimpanzees. Maybe. I don’t know…
Anyway. (I mean, you gotta have a little fun right? No harm in playing like kids, even when you aren’t!)
I went straight to Greenwise, bursting with energy after our fun and invigorating practice, to pick up some stuff for tonight’s dinner. I saw this recipe for Mango Rice Salad with Grilled Shrimp on the Cooking Light website and decided to make my own little variation of it. The flavors are so light and different than what I would usually think to put together, but it sounded delicious so I decided to give it a go.
I started by cooking some long grain brown rice in my rice cooker with water and coconut milk…layering the flavors, peeps. Just layering the flavors. While it cooked I chopped up the mango, red bell pepper, green onion, carrot, parsley and cilantro to toss into the rice once it was done…

Oh, I also squeezed a fresh lime over it at this point…yum.
Before all of that jazz began I marinated some shrimp with EVOO, cumin, curry powder, a tiny pinch of cayenne, some ground ginger, a drizzle of soy sauce…and I think that’s it. Instead of grilling it (I’ll pretend the weather was bad, but really I just don’t know how to man a grill…) I decided to sauté it on the stove. I got the heat real high and into the pan it went.

Mmmm, delicious. This smelled amazing while it was cooking! I put the shrimp on top of the rice to transport it to S and K’s house which didn’t make for a beautiful presentation…but hey, at least it smelled and tasted good!
I think it would be fabulous with some avocado too…but I would probably put avocado on anything. ![]()
Shrimp is one of my favorite foods these days…in fact, I think I have eaten it everyday for the past few days. Any food you are loving right now? I need a new one to fall in love with!
Speaking of latest loves…I’m currently obsessed with the song Bloodstream by Stateless. Yep, I’ve played it about 8 times since noon. Check it out!

What a fresh looking salad! I am totally on a zucchini kick lately–good timing, I guess, since it’s gonna be growing like mad in my garden pretty soon!
I am heavily into coconut meat – it makes an amazing snack when mixed with some mango and pineapple, but you can really throw it into any dish.

Dude, that looks A-MAZINGLY BRILLIANT! I’m way into the shrimp-tastic-ness too. But… summer berries are also rocking my socks along with Chacies Peach and Mango salsa (found at Publix in the deli section). If you haven’t already, you MUST try this salsa. It will change your world! ;-)
When can you bring that to my house for dinner? Looks ABSOLUTELY…..wonderful! :chic:

Thanks so much for sharing the great song Courtney. I’ve never commented before even though I really get a kick out of your blog and check it regularly. I had to drop a note today though to thank you for Bloodstream… what a good song! I’ve also been really enjoying your cooking for S&K… what beautiful meals, and I only wish I could have someone prep food for me so lovingly were I ever welcoming a new baby into the family.

Oooh, my goodness–that dinner looks BEAUTIFUL (not to mention, delicious!). You have me drooling over here. I adore shrimp; it’s one of my favorite foods!
Oh man, does that dish look good!!! I’m trying out the “raw” diet for a bit here – and that’s one of the pitfalls is that you are supposed to stay away from food combining, so no rice dishes plus shrimp…. but I’m glad someone got to enjoy it! :)
