Fabulous!

Something funny happened today….

 

 

This morning after play work at the studio (where I ran into Jenna! So good to see you!) I headed over to Greenwise to pick up a few things for dinner tonight. I had gotten everything I needed and as I was checking out the sweet little old man that was bagging my groceries asked me how my day was going. My response? A very upbeat and enthusiastic Fabulous!

 

 

 

I’m not gonna lie, my enthusiasm as I exclaimed Fabulous! took me a bit off guard…was it really going that great? I woke up early, had oats and almond butter for breakfast, drank a bit too much coffee (and may or may not have snagged a few squares of organic dark chocolate before 8:00am) and headed out the door to work at the studio. Nothing special really, and nothing too out of the ordinary. But I was in an unexplainably good mood! Just happy and content with where I was and what I was doing.

 

 

Why? Well, I’m not really sure. I think it’s a combination of things. I’ve spent the last week or so in the company of really great friends, just talking, laughing, and being myself. It’s renewed my appreciation for the little things, ya know? I think happiness is an attitude, something you must choose. In fact, me and my little grocery store helper talked about it for a while as he helped me with my bags. He was so funny, and proudly talked about how he never has a bad day because he chooses to make the best of every moment.  He said there is “no point in not being happy!” Umm, yah!! So today I’m choosing to have a great day! And I think you should too Open-mouthed

 

 

Of course a great day wouldn’t be complete without good food. I mean, really, who are we kidding here.  I had an abundance of fresh parsley leftover from yesterday’s meal since I only used about 1 tablespoon in the whole dish so in an effort to not be wasteful I decided to make some tabbouleh.

 

 

I strayed from the norm this time and used quinoa instead of barley and also added some chopped cucumber and mint. Delicious!

There was a bit of a mishap with the quinoa…I dropped some of the little grains on the floor! What a mess! So what’s a chef to do? I swept them up after Raleigh licked them and threw them back in the pot…

Kidding! Had you there for a second though, didn’t I?

And what better to go with tabbouleh than hummus! Going along with the same theme of breaking from the norm, I decided to use white beans instead of chickpeas since they are super creamy. I added in some tahini too as well as the zest and juice of two lemons, olive oil, a few leaves of basil, a tiny clove of garlic, salt and pepper. I would recommend adding more garlic for some extra flavor, but I went easy per S and K’s request.

I’m also bringing along a big salad and some rotisserie chicken… just in case you were wondering Wink

oh I’ve dropped quinoa before too :) it’s fun getting all those little grains picked up, huh?

I am having a great day. Thanks for asking. You’re EXACTLY right about happiness being an attitude, but I’ll go you one better. Happiness is a CHOICE. This is something I’m always telling my down and out brother who never listens. Life is a big beautiful blank canvas. I happen to like to paint with happy colors. :)
