This morning I had the pleasure of taking one of my favorite yoga classes with Jenna, from Eat, Live,Run. It was a rather challenging class for me today, mostly because I’m a bit tired for some reason, but I am feeling much better after moving my body a bit and being in the company of some of my favorite yogis and yoginis.
Once home, I got to work preparing not one, but two dishes simultaneously; A Tofu Veggie Stir-Fry for S and K, and some Coconut Curry Rice for moi. I was also facebooking, blog stalking, and belting Jailer by Asa at the top of my lungs…but that’s another story. Yep, I’m a multi-tasker by nature.
Let’s start with the ‘fu and veggies, shall we? I used an Ellie Krieger recipe for inspiration and started out cooking it in our Wok. Unfortunately the little booger died on me mid-fry and I had to transfer it to a pan on the stove…
…It still came out delicious though!
Mmm…
Next up was something that I literally threw together. There is something liberating about cooking without a recipe, just throwing stuff in and hoping for the best. Well, I definitely got the best…this stuff was delicious! I shall call it, Coconut Curry Rice…with Veggies.
I might be having a love affair with a kitchen appliance. My little rice cooker is amazing. I started out by putting in some ghee (clarified butter) and fresh ginger.
I let that melt down and soften a bit (and am realizing now that I forgot garlic…darn it!) then added 1/2 cup of brown rice, 1 cup of water, and some spices including curry powder, cayenne, vegetable bouillon, cumin, salt…and I think that’s it. I really don’t know what all went in it, as I just grabbed whatever sounded good!
Set that little guy to cook and wait for the magic to happen. About 35 minutes later I had this…
…and then I added some chopped green onion, red bell pepper and light coconut milk. Mmm, healthy fat… I love you.
Once that had cooked through for a bit I added a bit more coconut milk and a big ol’ handful of spinach. And voila! It’s not a looker, but it was certainly delicious and nutritious…it gives me hope for my fast approaching return to school and dorm-style living. Yummy and healthy food can still be mine!
Holy cow. This stuff was so darn good! The coconut milk made it extra creamy and the spinach was a nice green touch. Next time I am definitely going to add some garlic, and also throw in some chickpeas for a little protein and some cilantro to jazz it up. YUM!

Aren’t rice cookers the best? We got ours about three years ago and I love how easy it makes eating healthy!

You are a stir fry goddess my dear. I love coconut milk too! I only have a hard time thinking of ways to use it once I open the can because I usually only need a small amount at a time.

I love to put it in my oats too! So delicious. You could mix it with greek yogurt to thin it out and make it a bit more flavorful too. And it’s always great in rice!!
OMG, her voice is AMAZING! Light and very refreshing. Coconut milk and curry duo is yum. I love adding kabocha to that combo. Your creations look delicious as always.
I love to make vegetarian fried rice with tofu at home. It tastes so yummy ,and so much healthier than getting it out at a restaurant. Yours looks really good I might have to make that with some tempeh I need to use up in the fridge.
