Today is the big day! Well, not really.
It’s the beginning of a big week, I guess I should say. Today I’m taking all of my things up to Gainesville, dropping them off, and heading right back to Tampa for a long weekend of yoga teacher training. It’s going to be a whirlwind, but I think I can handle it ![]()
I, of course, made time for a delicious breakfast. Someone mentioned the other day that I should find a way to put coconut milk in my breakfast. Well, I have actually been doing this for quite some time!
This has been my latest favorite concoction. I have been having it every morning for a couple of weeks:
- 1/2 cup of old fashioned oats
- 1/3 cup of light organic coconut milk
- 1 cup of water
- 1 tbsp chia seeds
- cinnamon
- dash of salt
- a touch of agave (for a little some somethin’
)
- blob of almond butter
You guys must seriously try these “Coconoats.” Get it? Coconut…Oats….Coconoats. Okay, okay, I’ll stop! I just can’t help myself sometimes!
This bowl is loaded with lots of healthy fats and fiber and should do an excellent job of fueling me through a very busy day!

I ADORE coconut milk in oatmeal! It makes it so creamy and rich. Yummy.

I will totally try your Coconoats. I think I have all ingredients on hand, and would you believe that I am sick of oat bran? I am. Back on a rolled oats kick.

It sounds delish but I have a question — do you cook this at all? Or do you just pour the wet ingredients over the dry and let them soak up fora while?
I looove making my oats with coconut milk. It gives them such a rich texture.
That is a great quote as well. It is so true, that when we stop and appreciate the journey, we realize that all the fun is in the neverending quest for self expansion and understanding. Once we answer one question, there will always be another.
