Noodles, anyone?

This morning I had the pleasure of taking a yoga class from one of my favorite yoginis and dear friends. Annette is a wonderful massage therapist and yoga instructor, and was subbing this morning’s Yoga Grooves class. She never fails to take me deeper into my practice and self, and I’m so grateful that I got to take class from her this morning!

 

We opened with a little prayer..perfect timing since I accidentally forgot to do my own mini-devotion this morning Embarrassed  It was a beautiful little prayer…an invitation really, to say yes, and invite strength and courage, and grace and wisdom into the day. I’m going I to have her write it down for me because I found it to be so beautiful. Don’t you worry, I’ll share it with you when I get my little hands on it!

 

Post-yoga, I was famished and couldn’t wait to enjoy a salad that I prepared yesterday…

This was so simple and turned out really delicious. I had been craving spiralized zucchini (okay, I know that most people don’t crave zucchini “noodles”…but let’s be honest. I’m not most people Open-mouthed ) and wanted to be a bit creative. I mixed the zucchini “noodles” with some very thin bell pepper (sliced on the mandolin), some baby romaine, scallion, and cilantro.

For the sauce I whirled up some tahini, sesame oil, red miso paste, tamari, and fresh ginger. I added some warm water too to loosen it up a bit. Very quick and simple and SO delicious.

Clearly I made a ton, so I predict I will be having this meal for dinner too Wink.

 

I’m excited to spend the weekend relaxing and being with friends. No big plans really…maybe some beach time? We will see. Tonight I’m off to observe and adjust in a yoga class… just because I’m certified doesn’t mean I can’t still learn Open-mouthed.

What a beautiful looking zucchini dish! The dressing looks great too. Very creative and fresh. Congrats on being a certified yoga instructor. That’s awesome!

Not like other people, well that is quite alright, GREAT in fact. You are lightyears beyond where most people are in college, so lovely to see. Keep being true to yourself, no better way to be:)

That noodle salad makes me want a spiralizer and a mandolin ASAP!

Those “noodles” look so good! I know I eat tons of spaghetti squash … kind of similar! Congratulations of becoming a certified yoga teacher! Yeah for you:)

Which spiralizer do you use? Your “noodles” look so good. I have an older one and they don’t look like yours. Enjoy your day!

That sauce looks awesome! I have never thought about using Tahini as a sauce base. What I wouldn’t give for a spirulizer and mandolin…

I’m not “most people,” either….I crave freakin’ kelp noodles! ;-)
