Coconut oil made another guest appearance in my kitchen today. I was craving vegetables (Umm, do normal people crave vegetables? Don’t answer that…) so I made a quick “Clean Out The Fridge To Make Room For More” stir-fry with some broccoli slaw, mushrooms and spinach.
The star: coconut oil. Strike a pose, hot stuff…
I put some tamari in it, and a little sriracha at the end…
and then the magic – a fried egg.
Not pretty. But simple. And delicious.
I’ll leave you with a an oldie but a goodie; Wild Geese by Mary Oliver. It’s one of my very favorites.

That stirfry looks wonderful. I think I am convinced and need to go out and get some coconut oil!
