Cards and Carbs

Today’s just been one of those days. Last night’s homecoming event went until 4am…wayyyy past my bedtime! I had class at 9:35 and hoped to sleep until about 8:40ish, but my body clock had other plans. 7:00am it was!  Let’s just say that 3 hours of sleep is NOT enough.

 

After going to class, going to work, and going back to class until 6:00pm tonight, I’m exhausted. It’s the perfect storm of stressful events this week, and all I wanted to do when I got home was curl up in bed for eight  a few hours.

 

I had a feeling I should check my mail box downstairs in the sorority house  when I got home this evening and lo and behold…fan mail!

My sweet friend Erin put this in my box after reading this post.   She wrote me a very sweet note, and slipped in a little “Beauty Do” from Glamour Magazine involving none other than the wonder ingredient, coconut! I’m definitely going to have to try this one Open-mouthed

 

Of course I had to get my daily coconut oil fix… I decided carbs would make everything better so I had some oats with banana, honey and coconut oil for dinner.

It worked! Much better Open-mouthed

I’m so glad you’re getting into coconut. One of my absolute fav flavors!

Oatmeal for dinner is the best! And I love adding coconut oil too, makes it so creamy!

Love all your coconut butter. :) I have never tried it! Just wanted to pop over and say hi, and hope you are enjoying our lovely YOGA and school and life, sweet friend.
