Oh, I’m good. Really good.
Tonight I made something delicious in the rice cooker. Nope, not rice. A stir-fry, with a new ingredient:
I zapped the sweet potato (which was $0.45!) in the microwave while I went to work on the veggies. I chopped up the chicken sausage first and let it sizzle for a bit in none other than coconut oil! Then added the veggies and cooked til they were done. Voila!
Sorry ladies and gents, the pics aren’t the best today…but I was quite hungry and ready to dig in. It was delicious!
Is it weird that I am in love with a rice cooker? Don’t answer that…
Tonight is our last homecoming event. We are loading buses at 9:00pm to head to a “Destination Unknown.” Well, unknown to the rest of the chapter…but I know where it is. Muahahahaha! ![]()
I’m in for a very long night (we won’t be getting back to Gainesville until 5:00am!!! I know, it’s obscene!), but I keep telling myself that “It’s almost over!” and “It’s only temporary!”
Oh, and this one from The Invitation by Oriah Mountain Dreamer is helping me too:

Ok, several people have referred me to your blog via comments on my last post (bc I am newly without a kitchen!!). And I completely understand the recommendations. You put your rice cooker TO WORK. I should probably invest in one; I never realized they were so versatile!

Don’t worry about loving your rice cooker – I love mine, too! I’ve graduated from just cooking rice, to making my oatmeal and reheating leftovers in it. Just yesterday I came home STARVING after running errands, so I put my leftover chili in the rice cooker, turned it on while I put groceries away and did more errands around the house and just when I was ready to settle down and eat, it clicked off and was ready! It is a much needed tool in my kitchen now – in fact, I’m considering getting one for work, too!

After seeing all the creations you can make in a rice cooker, I really really want one! It would help me out soo much.
