What’s in a name?/Oatmeal Upside Down Cake

I love oatmeal. I think it’s by far, my very favorite breakfast food. But let’s be honest. Oatmeal, as delicious and nutritious as it is, is a less than glamorous breakfast. I mean seriously, what do you think of when you hear the word oatmeal? Mushy mush.

 

But, I think oatmeal is a true testament to the phrase “You can’t judge a book by it’s cover.” Our friend Kath has given her oats a creative flair with unique toppings, and our friend Heather serves it up in jars, making a nerdy breakfast food, really quite cool!

 

Well, I think it’s all in a name. Would you rather eat oatmeal (just say that to yourself…oatmeal. Even just the word is not attractive!) or would you rather eat oatmeal upside down cake?

 

That’s what I thought!

So, yesterday I had a genius idea. Well, at least I think it’s genius, but then again I am quite partial. I always eat my oats with a healthy spoonful of almond butter, or peanut butter, depending on how nutty I feel on that particular day( Wink), but I always save it for last. Ya know, like a “save the best for last” kinda thing.

I slide a big spoon of nutty goodness onto my oats, like so,

and eat around it for as long as I can before it melts down to the sides.

- Light Bulb Moment -

On Saturday morning I made oats in one of our very merry Christmas bowls.

It was business as usual until about halfway through my breakfast when my oats got a tad too lukewarm for my liking. Since these bowls have a metal ring around the edge and can’t go in the micro, I transferred the remaining oats and pool of melted almond butter into a different bowl, heated it back up, and went on my merry way.

What a happy surprise! The almond butter found it’s way onto the very bottom of the bowl, so I didn’t get to it until the last few bites…and it was melty and delicious, just the way I like it.

 

So this morning, I did it on purpose like so…

First, I put some AB in a bowl…

Then poured the hot oats over the AB blob, drizzled on some honey…and since I just watched Julie & Julia last night and was feeling inspired, butter. Oooh, butter. Why did I ever doubt you!?

Everyone could use a little more butter in their life. This was maybe 1/8 of a tablespoon of butter…a little goes a long way! Butter : Love it, live it.

 

And remember that spoonful of almond butter we put on the bottom?

The moral of the story:

– Save the best for last.

- Eat oatmeal for breakfast, but when you do, call it something fancy like Oatmeal Upside Down Cake, or Almond Butter Layer Cake, or Almond Butter on the Bottom Breakfast.

- Butter makes everything better.

- You are going to want to have this for breakfast tomorrow.

Yum! I love oatmeal, and I love nut butters! I will need to try this.

One question though: I know you’re an Oat Bran fan too, and I love to make it- but it always ends up EXPLODING in my micro before it thickens? How do you cook yours?

Such a great concept :) As I ate my oatmeal this morning, I was thinking about this same subject – how I eat around the nut butter until the oatmeal is a little leaning-tower-of-Piza about to topple over… that’s when I’m forced to finally delve into the peanutbutterygoodness on top. Glad to see there’s others out there who do the same!

Oh man, why have I never thought of that! And hoooray for butter in oats. I always add butter to savory oats but have never done it to “regular” oats. yum!

p.s. I watched Julie and Julia this weekend too and when I went to make scrambled eggs, I added a boatload of butter and the dear husband came and looked over my shoulder and asked me if I was channeling my inner Julia. It was a pretty cute moment :)

Butter on oats is genuis!! I always eat my nut butter first so I guess I’m opposite – ha :O).

you are freaking adorable! that oatmeal looks perfectoo.. you def make oatmeal look glamorous. but i totally agree, when i think of oatmeal- i think of like the three little bears or something!

I have oatmeal every morning with lots of ground flax, toasted sesame seeds, and oodles of cinnamon (and nut butter afterward) but yours looks a lot more appetizing :) Mushy mush is delectable :)

I love it! That’s a great idea, because I totally eat oatmeal for the almond or peanut butter.
I’ve never tried butter on my oats, never even thought of it, but does that look good.

Man, the lessons you can learn from a mear bowl of oatmeal!

Love it my friend. That’s why oats in the jar are soooo good b/c you get the chunks of almond butter at the end of the meal. It’s especially nice when there is almond butter all over the sides of the jar as well.

Love all the names, but I think Oatmeal Upside Down Cake is my fav. :)

Yum! Oats in butter! You are brilliant. It’s ironic that that’s probably how they were eaten for centuries anyway.

after too many years of restrictive eating, i recently “rediscovered” butter. and oh my gosh, i can’t believe i had banned it from my diet so many years ago. i don’t eat a lot of it. but, like you said, a little goes a long way! yum!
