Leftovers.
Even just the word doesn’t sound too appealing, not to me at least. Nope, I’ve never been much of a leftovers kinda gal, but lately I’ve been inspired to jazz them up a bit and make something new.
Some leftovers are easy to use. Like this jar for example. It’s technically a leftover, recycled into my new favorite water cup.
And of course, there’s the leftover dinner that’s not nearly as exciting as it was in it’s original form, but alas, it must be eaten.
Take this morning’s breakfast for example. I had some leftover sautéed onion and red bell pepper from last night’s dinner (which looked much like dinner this night, and pretty much every other night for that matter…).
What to do, what to do….
I went the savory breakfast route and decided to make an egg scramble with my leftover veggies, and a handful of the heaping bag of spinach I got at the market earlier this week. I’ve had spinach for the last three days and have barely made a dent! Best .74 euro I ever spent ![]()
First I threw the leftover veggies into a pan with melted butter to heat them through…
..then the spinach.
Once it was cooked through,
I added two eggs.
Yo, breakfast. Why you lookin’ at me like that!? I realize now what it was trying to tell me…“You’re burning me!” Oops.
Then. Scramble.
And done! If you’re feeling extra classy, you can break up a Babybel cheese and place it in various spots around your scramble. You’d think with all the cheeses in France, I’d have something amazingly delicious in it like Camembert, or some type of gouda with cumin….need to get on that!
It’s no looker, but didn’t you listen to your mama growing up? Beauty is on the inside!
I enjoyed my breakfast with coffee, something I’m learning to love without my chemical laden, sugar filled coffee-mate. Just a little bit of lait entier, and crème léger, and sometimes a bit of honey if I’m in the mood.
And I certainly never eat chocolate with my breakfast…nope. Never. Not me.
Hey, who ate my chocolate and left an empty wrapper!? Chocolate fairy did it again. Remind me to have a chat with her…
Two questions for you today:
1. What’s your favorite way to use leftovers? Leftover cooked veggies, grans, chicken? Anything! How do you use them?
2. Breakfast: Sweet or Savory? Or just chocolate….? No? Just me? ![]()

I’m pretty much a savory breakfast girl– love eggs and tons of veggies (so of course I am positively drooling over your scramble!)… plus a big mug of coffee smothered with CoffeeMate (yikes!) until it is basically warm coffee flavored “creme”.
Heyy Courtney– I am loving living vicariously through you right now! I’m stuck in coldddd Boston and living in Paris is my *DREAM*. Live it up ladyy! Anyway, to answer your questions..1) My favorite way to use leftovers?? Basically as my lunch during the work week. Anything that doesnt involve a lot of thought at 6AM is a-okay by me!! 2) I promise you, you are not alone in the chocolate for bfast club! I’m guilty more often than I’d like to admit. I do love a more savory bfast though. Veggie scramble with hot sauce. Yummmm :)

I almost always eat a sweet breakfast, even if I have eggs, I have toast + jam on the side, etc. I love using leftovers for lunches the next day!
Bonne Maman jars are some of my favourites to recycle! They also make great spice and trail mix jars!
Had dark chocolate chips with my breakfast today too. We would make great room mates!
Never enough leftovers here! But I do love Arnold’s Sandwich thin (ww) with egg whites, cheddar cheese….sometime spinach for breakfast! Or I love my Go Lean, with fresh blackberries….yummy!

Yay for using jam jars as glasses- I do the same thing with Bonne Maman jars! I just love the red and white checkered-lid. That company also makes this awesome chestnut spread- have you tried it? Also, this is random but I really like the colour of your coffee mug! Reminds me of spring :)
At home I’m all about the sweet breakfasts (I’m especially partial to this date-walnut-pear loaf I’ve been baking) but I like to order savoury when I go out for breakfast! It feels more special for some reason.
We usually package up leftovers for lunches. Well, my husband’s lunches mainly. If I have leftover oats or anything, I tend to freeze them for a rainy day.
As for breakfasts, I’m definitely more of a sweets girl. :-) But I do dabble in savoury now and then.

sweet breakfast! always! i am 100% okay with a little chocolate with breakfast :)
I usually eat leftovers straight up as whatever they were in the original meal. If it’s a bunch of little bits of definite things I just dump them all together.
I go back and forth between sweet and savory for breakfast, whatever I feel like that day.
I had ice cream for breakfast yesterday. No shame in choco. :)
Nothing wrong with chocolate for breakfast!
It depends on what mood I am in, sweet or savoury!
And I try to use leftovers as much as I can! I usually throw veg on a salad, or with a leftover grain, mix it up or micro it, and viola!

Alas, with my boyfriend, there are never leftovers… however, on the breakfast topic, I don’t really fit into either category! I love my oat bran bran with some nice salty nut butter, mmmm. I usually salt the oats a bit too, it is so good in the morning!
I love my leftover veggies in eggs, as well! Your onions look SOOO perfectly caramelized, they’re making my mouth water. And I am definitely a sweet breakfast eater. Love me some banana oats.
My cousin calls leftovers “used food”, hahahaha. But I love them! I like them in egg scrambles, too. One of my favorite things ever is the risotto quesadilla, which we have to thank the great Kath for.
And I am a sweet breakfast person all the way. Oats or yogurt, please. I went to Asia and everyone was eating pork for breakfast all the time and my poor stomach got completely overwhelmed!
Hehe, I save all my empty Bonne Maman jars too–they make such pretty containers for leftovers:)
