Cucumber and Shallot Chickpea Salad

1 can of Organic Chickpeas, drained and rinsed

1/2 of an English Cucumber, diced

2 shallots, thinly sliced

1/3 cup of fresh chopped parsley (or more to taste)

Juice of one lemon

2 tbsp EVOO

3 tbsp Balsamic Vinegar

Salt and Pepper to taste

 

 

Combine all ingredients in a bowl and ENJOY!
