Homemade Maple Cinnamon Almond Butter
-2.5 cups raw almonds
-1/4 cup maple syrup
- about 1 tbsp cinnamon ot to taste
- 1 tsp salt
Yields about 1.5 cups AB.
Combine all ingredients except salt in a bowl and roast almonds in a 350* oven for 15-20 minutes. Let cool for a few minutes and place in a food processor. Grind until smooth (about 10 minutes), scraping sides as needed. The AB should start to clump up or even form a ball. When this happens add in 1 tsp salt and continue to grind. You may also need to drizzle in some oil while it is grinding (no more than a tsp or two) to get it to smooth out.
I love this recipe because there are so few ingredients. Making your own almond butter is a simple way to stay healthy! And when almonds are bought from bulk bins or on sale, it is much less expensive than prepared almond butter. We usually buy ours at Costco to make granola. A large bag goes a long way!
