Spicy Lemon Basil Chicken

This chicken is wonderful over a bed of angel hair pasta and tomato sauce, sliced over mixed salad greens and veggies, or on the side of your favorite vegetable. The flavors are fresh, light and simple with a surprising kick.

 

- 1/4 cup chopped basil

- 1 lemon; zest and juice

- 1 tbsp extra virgin olive oil

- 3 cloves garlic, minced

- 1 tsp crushed red pepper flakes

- 1 tsp fresh ground black pepper

- 1/2 tsp salt

- 1. 25 lbs chicken breast

 

Combine all ingredients to form somewhat of a paste and massage into chicken.

Let marinate for 30 minutes to one hour. Grill for 5-6 minutes on each side until done. Simple as that!
